1 Tbl oil or butter
2 cups uncooked minute rice
1/4 to 1/2 chopped onion
2 eggs lightly beaten
2 cup chicken broth(or use water with 2 bouillon cubes)
3 Tbl teriyaki sauce
1 cup frozen stir fry vegetables (optional, but better for you)

Directions:
Directions:
Heat oil in a large skillet over medium heat.

Add minute rice and onion, brown slightly (about 3 minutes).
Add eggs, scramble until cooked thoroughly.
Add liquid and teriyaki sauce to skillet; bring to a boil.

Remove from heat and let stand 5 minutes.

You can also through in a handful of cooked vegetables, diced meat or shrimp and make it a meal.
