25 - 30 large tomatoes (4 qts. peeled, cored and chopped)
2 c. each finely chopped onion, red bell pepper & green bell pepper
1/2 t. red pepper flakes
1 T. mustard seed, 3 T. pickling spice, 1 T. celery seed
1 c. sugar
3 T. salt or to taste
2 - 2 1/2 c. vinegar
1 bottle of tomato catsup (optional)

Chop onions and peppers in advance.
Scald the tomatoes, a few at a time, in boiling water for 30 seconds. Plunge into cold water. When cool enough to handle, slip off the skins and drain the seeds. Chop the tomatoes.
Combine the mustard seed, pickling spice, and celery seeds and tie them up in a piece of cheesecloth.
Combine the chopped tomatoes, peppers, onions, sugar in a large non-stick kettle. Toss in the cheesecloth bag. Add the pepper flakes. Cook for about 45 minutes to thicken. Pour in the vinegar and simmer until it's as thick as you want it. During the last ten minutes, add the ketchup if you desire. Taste and adjust seasonings as needed. Pour into clean canning jars while still boiling hot or freeze.

Grandma K. took great pride in her chili sauce. She used it as a condiment on burgers and to top meatloaf. One of her concerns in her final days was that now no one would make the chili sauce!
