Ingredients: 1 16 oz. tub Curly's Pulled Pork (Fareway pre-packed meat case) or any brand 8 slices of bread (Texas Toast works good) Butter for bread 8 slices cheddar cheese (they have it pre-sliced in the cheese section)

Directions:In the microwave or on stove top, heat through the pulled pork. Butter on one side the 8 slices of bread. Heat griddle or skillet to medium low heat. Assemble the sandwiches by laying the the four slices of bread buttered side down on the griddle. Put a slice of the cheese on top, then a scoop of pork, and then another slice of cheese. Top with remaining slices of bread, buttered side facing out. Heat until bread is golden brown and bottom cheese is melted. Flip and grill the other side to the same. Remove from griddle and let sit 3 minutes before slicing diagonally and serving.
The original recipe had you make a pork roast with BBQ sauce. Then make homemade macaroni and cheese which got put on top of the pork and topped with a cheese slice. I think serving the mac and cheese on the side is a better plan. Sandwich is very filling and messy enough. The cooking time for the all homemade was 8 hours 20 minutes. My method takes 20 minutes tops. |
