2 pounds Chicken Breasts, thin strips, about 2 inches long
about 10 wooden 6 inch skewers


1 ¼ cups coconut milk, stirred to blend
¾ cups smooth peanut butter
3 tablespoons fish sauce
1 tablespoon soy sauce
3 tablespoons minced fresh ginger
3 tablespoons light brown sugar
1 teaspoon crushed red pepper flakes

For the Sauce
1) Combine all ingredients into a food processor or blender. 2) Blend until smooth and set aside

For the Chicken
1) Get a charcoal grill hot. 2) Cut chicken and fold in a ribbon motion on to the skewers. About two pieces per skewer. 2) brush with oil. 3) Grill chicken about 3 to 4 minutes each side or until cooked through. 3) Serve with the sauce.

Satay is a dish of grilled meat served with a side of spicy peanut sauce. If you want your sauce spicier use chili powder. Best cooked over a charcoal grill. We recommend eating this with our coconut rice recipe in this book.
