1 1/2 lb. stew meat
1 chopped onion
2 bay leaves
3 chopped potatoes
2 sliced carrots
V-8 juice
beef bouillon, salt, pepper

Optional adds: barley, peas, corn, green beans, cabbage, chopped tomatoes, celery - just use whatever you have. The more the better.

Cook 1 1/2 lb. stew beef which has been trimmed and cut up. Cover with water and add a chopped onion and 2 bay leaves for flavor. This can be done either on top of the stove (figure 2 hours at a slow simmer) or in a slow oven (275 D. for 2 1/2-3 hours) Add more water or beef broth as needed.

When the meat is very tender, add potatoes, carrots and any left-over vegetables you might have. Cabbage is good, too.

When the vegetables are nearly done, stir in 1 c. of V-8 juice and season with beef bouillon, salt and pepper. Remove bay leaves before serving.
