1 onion, chopped
2 Tbsp oil
1 Tbsp lime juice
1 tsp ground cumin
1/2 tsp salt
1/4 tsp cayenne pepper
1 can corn, drained
1 can black beans, drained
2 tomatoes, chopped
1 large bag tortilla chips
1 small container mild salsa
2 c shredded cheddar cheese

Preheat oven to 350 F

In a skillet, saute onions in oil and lime juice over medium heat for 3 minutes. Add spices, corn, beans and tomatoes. Cooke 5 minutes.

In a greased 9 x 13 baking dish, spread all of the chips out. Top with veggie mixture. Spread salsa over. Top with cheese. Bake 20 minutes.

This dish was made for a book club I participated in just after graduate school. It was so good, I asked for the recipe. Even meat-lovers with love this vegetarian dish.
