Chicken Empanadas Recipe

2 refrigerated pie crusts, room temperature
1 large (or 2 small) boneless chicken breasts
1 package cream cheese
1 Tbsp chopped cilantro
2 Tbsp salsa
1 T finely chopped onion
1 T finely chopped green pepper
1/2 tsp salt
1/2 tsp ground cumin
1/2 tsp garlic powder
1 egg, beaten

Set pie crusts out to warm to room temperature before unrolling - about 20 minutes.

Preheat oven to 400 F.

Place chicken in a microwave safe dish with a lid. Cook 5 minutes. Check and if not done, microwave another 2-4 minutes. Remove to a cutting board and cut to very small pieces.

Place cream cheese in the dish. Microwave 1 minute, stir, microwave another minute. Repeat until melted. Add all ingredients - chicken through spices. Mix well.

Unroll pie crusts and cut each in half (you have 4 halves). Add 1/4 of the mixture to each. Brush edges with egg. Fold in half. Use a fork to press edges together. Place on a greased cookie sheet. Brush top with egg. Bake for 20 minutes or until tops are golden.

Tip - don't over stuff the pie crusts or you won't be able to seal. Serve with easy "fancy" cornbread.
