1 c rice
1 tsp ground cumin
1/2 tsp salt
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp cayenne pepper
4 large green peppers
1 lb ground beef
2 Tbsp oil
1 c spaghetti sauce
1 c shredded cheddar cheese

Directions:

Preheat oven to 350 F.

In a sauce pan, bring 2 cups water to boil. Add rice and spices. Stir once, then cover, reduce heat to low and simmer 30 minutes or until water is absorbed.

Cut tops off the green peppers and remove the core and seeds. Place in a square baking dish and bake for 15 minutes.

Meanwhile, in a skillet, cook beef in oil over medium-high heat until beef is done. Stir in cooked rice and spaghetti sauce. Remove green peppers from oven. Carefully spoon beef/rice mixture into each pepper. Stuff them full. Place back in oven for 15 minutes. Sprinkle with cheese and bake 10 more minutes or until cheese is melted and bubbly.
