Buy a tenderloin roast, allowing 1/2 lb. per person.

Rub all over with oil and thyme.

Directions:
Roast 15 minutes at 425. Reduce oven to 350 and roast 35-40 minutes. Meat thermometer should be at 150-155.

Let stand for 15 minutes. Slice into 1/2" thick slices.
