1 1/2 cups flour
1 t. salt
2 t. baking powder

1/2 cup butter, melted
1 cup sugar
3 eggs
16 oz. ricotta
1/2 t. vanilla ( you can change the flavoring according to whatever fruit you use, ie. lemon or almond)

2 cups raspberries, other berries, or cut up fruit.
Coarse sugar (optional)

Directions:
Directions:
Preheat oven to 350º. Grease and flour 9” round pan.

Beat butter and sugar. Beat in eggs and vanilla. Add ricotta. Add dry ingredients and mix just until blended.

Fold in fruit or berries, reserving some for the surface of the cake.

Spread evenly into prepared pan. Arrange reserved berries on top.

Bake 50-60 minutes, until cake tests done. Sprinkle top with coarse sugar. Cool.

Slice into wedges.

This is a good brunch cake or dessert cake. It can be picked up without crumbling.
I have made this with peaches and almonds, and blueberries with lemon. This basic cake could be made with any fruit you like.
