Ingredients: 1 lb. broccoli, chopped (fresh is best) 1 onion, chopped 1 cup chopped carrots 2 stalks celery, chopped 1 cup water 1 tsp. salt 1/2 tsp. pepper 2 cups milk 3 T. butter 2 T. corn starch 1 lb. Velveeta processed cheese 1 T. hot sauce

Directions:Place broccoli, onion, carrots, and celery in pot or steamer. Add 1 cup water and cook until tender.
In a separate large pot, melt butter over medium heat and stir in cornstarch. Slowly add in milk and stir constantly. Cook on medium-low until it starts to thicken. Cube the Velveeta cheese and add to milk mixture, stirring until all the cheese has melted.
Drain the water from vegetables. Put in food processor and blend until smooth but has some chunks to it. Pour into cheese sauce and stir. Stir in the salt, pepper, and hot sauce. Serve hot. |

Notes: In college, I was a cook at a health food restaurant and this was their #1 soup! You can also add any vegetables to the main ones that you like (zucchini, cabbage etc.), and it is a great soup to make if you have lots of leftover vegetables. It is not as caloric as some versions so it is much healthier for you!
