1 1/2 lb boneless chicken breast
1 Tbsp oil
1 tsp salt
2 garlic cloves, minced
1 large onion, chopped
14 oz stewed tomatoes
10 oz saffron rice
1 c water
1/2 tsp dried oregano
1/2 tsp ground cumin
10 oz frozen peas
16 oz frozen shrimp
1 small zucchini, cubed
6 oz can minced clams, drained

Directions:

In a Dutch oven, heat oil over medium-high heat. Use kitchen shears to cut chicken into bite-size pieces, add salt and cook in oil until done - about 10 minutes. Add garlic and onion and saute 4 minutes. Add tomatoes, rice, water and spices. Bring to boil, cover and simmer on low for 25 minutes.

Add shrimp, peas, zucchini and slams. Simmer for 10 minutes.
