2 boneless chicken breasts
2 Tbsp oil
2 c shredded carrots
1 14-oz can bean sprouts, drained
1/2 c water chestnuts, chopped
1/4 c green onions, chopped
1 garlic clove, minced
4 tsp cornstarch
1 Tbsp water
1 Tbsp soy sauce
1 tsp oil
1 tsp brown sugar
16 egg roll wraps

{Preheat oven to 475 F.

Place chicken in a microwave-safe dish with a lid. Microwave 5 minutes. Check and then microwave another 2-4 minutes or until done. Place on a cutting board and finely chopped.

In a skillet, heat oil over medium-high heat. Add carrots, water chestnuts and garlic clove and saute for 3 minutes. Add green onions and saute for 2 minutes. Add chicken and stir.

In a bowl, combine cornstarch, water, soy sauce, oil and sugar. Add to skillet. Bring to boil, then reduce heat to low and simmer 2 minutes. Turn off heat.

Working with one egg roll wrap at a time. Add 1/4 c chicken/veggie mix into center of wrap. Fold sides in and roll tightly. Place seam-side-down on a grease cookie sheet. Repeat until all wraps are filled. Spray tops of egg rolls with more oil. Place in oven and bake for 10-15 minutes or until tops of golden brown. Serve with plum sauce for dipping.
