2 boneless chicken breasts
2 Tbsp oil
1 onion, chopped
2 carrots, sliced
1 celery rib, chopped
1/2 lb mushrooms, sliced
3 T oil
1/2 c flour
2 c chicken broth
1 c milk
1 t salt
1 t garlic powder
1 t basil
1/2 t thyme
1/2 t pepper
1 c shredded cheddar cheese
8 uncooked buttermilk biscuit

Preheat oven 400 F.

Use kitchen shear to cut chicken into bite-sized pieces. Add to skillet with oil over medium-high heat. Cook 10 minutes or until done. Add onions, cook 2 minutes. Add carrots, cook 2 minutes. Add celery and mushrooms, cook 2 minutes. Put into a large greased casserole dish.

Return skillet to stove. Add 3 T oil, Whisk in flour, then whisk chicken broth, milk and all seasonings. Cook, stirring 2 minutes. Remove from heat. Stir in cheese until melted. Pour over chicken mixture in casserole dish. Top with biscuits. Bake 25-30 minutes or until biscuits are golden.

Chicken pot pie is a serious comfort food, but the pie crust is hard to get right. So I use butter milk biscuits instead. You can use any veggies you like - peas, corn, green beans.
