2 boneless chicken breasts
2 Tbsp oil
1 onion, chopped
2 c mushrooms, sliced
8 oz sour cream
2 Tbsp flour
1 tsp paprika
1 tsp salt
1/2 c chicken broth
2 c dry egg noodles

Directions:
Directions:
Use kitchen shears to cut chicken into bite-sized pieces. Add to a large skillet or Dutch oven with oil over medium-high heat. Cook until done - about 10 minutes. Add chopped onion and cook 3 minutes. Add mushrooms and cook for 3 minutes. Reduce heat to medium-low.

In a bowl, mix sour cream, flour, paprika and salt. Add chicken broth and mix. Stir into chicken/onion/mushroom. Warm, stirring occasionally to prevent sticking.

In large pot, bring 8 cups of water to boil. Add noodles and bring back to boil. Cook 7 minutes. Drain. Stir noodles into the chicken mixture.

I don't remember where this recipe first came from but I started making it just after Jeremy and I moved to Battle Ground. You can substitute beef for the chicken. I like to serve with a side of steamed broccoli.
