8 1/2 inch thick slices sourdough Bread
1 eggplant
1 clove garlic minced
1-2 Tbsp cooking oil ( i use olive oil)
1/4 cup mayonnaise
4 lettuce leaves
4 1oz slices gouda cheese
1 tomato sliced

Directions:

Toast bread, set aside.

Cut eggplant into 1/2 inch thick slices.
In large skillet cook garlic and oil for 30 seconds.
Add eggplant slices. Cook for 4 minutes or until eggplant is tender, turning once.
Drain eggplant on paper towels.

For each sandwich use 1 tablespoon mayo spread between two toasted bread slices.
With mayonnaise side up, top 1 bread slice with lettuce, cheese,eggplant and tomato.
Sprinkle with salt and pepper.
Top with the other slice on bread.
