¼ c. salt
8 c. water
12 slices of bacon
1 16oz bottle of Italian-style salad dressing
toothpicks

Directions:
Directions:
Mix together salt and water. Set aside ⅔ of the mixture, and pour the rest into a glass baking dish. Soak the duck in the salt water overnight to remove the wild game taste. Change the salt water twice, or until mostly clear.
The following morning, discard the salt water and pour the salad dressing over the duck breasts and marinate for at least 8 hours.
Preheat oven or outdoor grill. Wrap each duck breast with half a strip of bacon and secure with a toothpick. If cooking in the oven, place in 9x13 inch baking dish and bake for 1 hour or until bacon is crisp and duck is cooked through.
For cooking on the grill, grill on medium heat for 30-40 minutes turning occasionally until bacon is cooked and duck is cooked through.
