2 T. EVOO
1 1/2 lbs. boneless, skinless chicken breasts
1/2 tsp. kosher salt
1/4 tsp. pepper
1 small onion, chopped
1 14.5 oz. can fire roasted diced tomatoes
1 T. chili powder
1 tsp. ground cumin
1 tsp. dried oregano
1/2 tsp. sugar
2 tsp. red wine vinegar
2 garlic cloves, minced
1/4 cup fresh lime juice
8 - 12 inch soft tortillas

Directions:

Heat olive oil in a large skillet over medium heat. Season chicken breast with salt and pepper, cook until golden, about 3 minutes per side. Add onion, cook about 2 minutes. Stir in tomatoes, chili powder, cumin, oregano, sugar, vinegar and garlic. Reduce heat to medium low and simmer 15 minutes. Shred chicken, return to skillet, add lime juice. Simmer until thickened, about 5-8 minutes. Warm tortillas. Divide filling among tortillas, serve with taco toppings of choice.
