2 cups orzo pasta
6 cups chicken stock
4 T. butter
1 1/2 cup grated Parmesan
2 cups frozen peas
2 large carrots, peeled and diced
3 cloves garlic, minced
Kosher salt and fresh ground pepper
Fresh or dry parsley

Directions:
Directions:
In a medium sauce pan, over medium heat, saute carrots and garlic for 2 minutes. Turn heat up to medium high , add orzo. Cook for about 2 minutes. Add one cup chicken stock and continue stirring until liquid is absorbed. Add one more cup of stock and stir until absorbed. Repeat with stock until its used up. Turn heat down, add Parmesan cheese and peas. Stir to combine and cook until peas are warmed through, season with salt and pepper. Garnish with parsley.
