4 cups shredded unpeeled zucchini
1/2 tsp. salt
2 lg. eggs
1/2 cup grated Parmesan
2 cups shredded mozzarella
1 cup shredded cheddar
pepperoni, optional
1 lb. ground beef
1/2 cup chopped onion
1 - 15 oz. spaghetti sauce
1 medium green pepper, chopped

Directions:
Directions:
Preheat oven to 375 degrees. Place zucchini in colander, sprinkle with salt. Let stand 10 minutes, then squeeze out moisture. Combine zucchini with eggs, Parmesan cheese and half of the mozzarella and cheddar cheeses. Press into a 13 x 9 pan. Bake for 20 minutes. Meanwhile, in a large saucepan, cook beef and onion and pepper until no longer pink, drain. Add sauce, spoon over zucchini mixture. Sprinkle with remaining cheeses. Bake 20 minutes more.
