1 T. butter
1/2 c. each chopped carrot, celery and onion
4 c. beef broth
4 c. water
14 oz. can diced tomatoes, undrained
1 c. quick-cooking barley
1/2 t. dried basil
1/2 t. dried oregano
salt, pepper
2 c. chopped cooked roast beef (can use canned)
1/3 c. frozen peas

Directions:
Directions:
Heat butter. Add carrot, celery and onion. Cook and stir for 4-5 min or until tender.

Add beef broth, water, diced tomatoes, barley and seasonings; bring to a boil. Reduce heat, simmer, covered for 20 min.

Stir in chopped roast beef and peas. Cook 5-7 minutes longer to heat through.
