Ingredients: 7 eggs 1/2 c milk 2c shredded cheese Chopped pre-cooked bacon and/or ham 1/4 c Rotel tomatoes or chopped canned tomatoes and add a little hot sauce 1/4 c each of onion and bell pepper; chopped fine 1/2 seeded Serrano pepper; chopped fine 1/2 non-seeded Serrano pepper; chopped fine 1-1/2 tsp each of dried basil & dried cilantro 1 tsp each of salt and black pepper

Directions:Oil the egg bite molds with a light layer of vegetable or olive oil.
Blended cheese, milk and eggs in blender until fully mixed. Added remaining ingredients and pulsed to mix.
Added 1 c water to the bottom of IP and added the short trivet.
Poured egg mixture evenly across the 14 oiled egg mold position; note: this recipe will take to runs to cook all of the egg mixture (7 at a time). Covered the filled mold with foil and place on the trivet.
Placed filled egg mold on top of trivet and cooked for 8 minutes using the Fish / Vegetable button, NR 10 min and then quick release |
