4 lb. Chicken breasts or 1 large hen
1 box Uncle Ben's wild and long grain rice
3 to 4 onions chopped
2 sticks butter
3 Tbsp. Flour
1 1/2 cans mushroom soup
1 C milk
1 large can mushrooms
1 lb. Grated sharp cheese
salt & pepper to taste

Directions:
Directions:
Cook chicken and shred. Cook rice as directed. Saute onions in butter and blend in flour, soup, milk for sauce. Add mushrooms and seasonings.

In large casserole, alternate layers of sauce, rice, chicken and cheese, ending with a small layer of sauce on top to prevent cheese from drying out. Bake at 300 -350 degrees until bubbly.
