1/2 C Shortening
1 C Brown Sugar
1 Egg
1 tsp. Soda
1/2 C Sour Cream
1/2 tsp. Salt
2 C Flour
2 C Oatmeal
1 tsp. Vanilla

Filling:
3 C Dates
1 C Water
1 C Sugar
1 tsp. Vanilla

Directions:
Directions:
Preheat oven to 350º. Cream shortening and sugar, add egg; set aside. In another bowl, add soda to sour cream. Add this to the to first mixture. Sift salt with flour. Add Oatmeal, Flour and Flavoring to creamed sugar mixture. Chill. Roll in balls, place on cookie sheet and flatten with glass dipped in sugar. Bake 10 minutes.

To make filling: Boil together until dates are soft; add flavoring. Spread between two of the cookies to make a sandwich style cookie.

These and the Sand Bars are cookies that my father-in-law, Don Hilbert (Rachel's great uncle) just loved. He told stories of how he would sneak into Marqueritte's freezer and eat cookies from the back porch, every time he visited. These are cookies that he requested for his birthday or Christmas. I would make him big batch and he would put them in his freezer and sneak them out. :)
