1 lb beef roast
2 Tbsp oil
1 can diced tomatoes
1 bay leaf
1 tsp salt
1/4 tsp pepper
4 medium potatoes, quartered
5 larger carrots, cut into 2-inch pieces
12 button mushrooms
1 onion, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1/4 c melted butter
1/4 c flour

In a Dutch oven, brown all sides of the beef in oil over medium-high heat.

Turn temperature down to medium-low. Add water to 2-inches deep. Add tomatoes, bay leaf, salt and pepper. Cover and Simmer 3 hours.

Take meat out and set in a large casserole dish, cover. Add veggies. Cook until potatoes and carrots are fork tender - about 20 minutes. Remove veggies to casserole dish.

Whisk flour into melted butter. Ladle one cup of leftover liquid into butter/flour and whisk. Then pour the butter mixture into the Dutch oven with the rest of the liquid. Whisk until just thickened. Pour gravy into a gravy dish.

Slice beef. Put veggies back in Dutch oven. Lay sliced beef over. Serve with gravy.

My mom made this dish when I was growing up and it's my ultimate comfort food. When I started making it for my family I added the gravy. It's great to serve with a side of buttermilk biscuits.
