1 lb lean ground beef
1 onion, chopped
1 green pepper, chopped
2 Tbsp oil
1 15 oz can diced tomatoes
1 ½ c water
1 c rice
1 oz Taco seasoning
1 tsp salt
3 green onions, diced
1 tomato, chopped (seeds discarded)
1 avocado, chopped
1 c shredded cheddar cheese
1 bag tortilla chips

Directions:
Directions:
In a large, deep skillet or Dutch oven, heat oil over medium temperature. Add onions, saute for 2 minutes. Add green pepper, saute for 2 minutes. Add ground beef, cook, breaking up the pieces until the meat is browned.

Add tomatoes, water, rice, seasoning and salt. Cover and simmer over medium heat for 25 minutes or until all liquid is absorbed.

Remove from heat. Remove cover. Sprinkle with cheese, green onions, chopped tomatoes and avocados. Serve with tortilla chips.
