2 Tbsp oil
1 onion, chopped
1 garlic clove, minced
1 Anaheim (or green bell) pepper, chopped
2 15-oz cans black beans, drained
2 15 oz can corn
1 can light beer (Bud Light)
1 tsp ground cumin
1 tsp salt
4 large flour tortillas
2 c shredded cheese
½ c sour cream
¼ c chopped green onions

Preheat oven to 350 F.

In a large skillet, sauté onions and garlic in oil over medium heat for 2 minutes. Add Anaheim peppers, sauté 2 minutes. Add beans, corn and beer. Stir in cumin and salt. Simmer and reduce, stirring frequently, until almost no liquid is left.

Use a spring-form pan, sprayed with oil. Place on tortilla in bottom of pan. Add 1/3 bean mixture and 1/3 of the cheese. Add another tortilla and 1/3 each bean mixture and cheese. Add third tortilla and remaining bean mixture and cheese. Top with last tortilla. Spread sour cream over and sprinkle with green onions.

Bake for 15 minutes. Allow to cool for 10 minutes. Remove spring form and cut into 6-8 wedges. Serve with salsa.
