Indian Cauliflower Chicken Recipe

1 large head of cauliflower
4 chicken boneless breasts
2 tsp beef bullion
2 tsp ground cumin
1 tsp salt
1 c white rice
Canola oil
2 ½ c water

Directions:
Directions:
Add 2 inches of oil to a large, heavy pot (like a Dutch oven). Head over medium-high. While it heats up, cut cauliflower florets. Add cauliflower to hot oil, in batches, and fry until deep golden brown. Use a slotted spoon to scoop from oil and rest on a paper towel covered plate.

When all the cauliflower is fried, dump oil from pan into a heat safe container for disposal (do not poor down sink). Don’t clean the pot, just wipe excess oil out with a paper towel. Place chicken breasts back in pot. Add rice, cauliflower and spices. Pour water over. Bring to boil, then reduce heat to low, cover and simmer 40 minutes or until all water is absorbed.
