1 3/4 cup flour
2/3 cup sugar
2 tsp baking powder
1/4 tsp salt
1 Tbsp lemon zest

2 eggs
3/4 cup plain yogurt
1/4 cup melted butter
1/4 cup lemon juice

1 cup blueberries

Directions:
Directions:
Preheat oven to 400º. Insert paper liners in muffin tins or grease lightly with oil.

Combine all dry ingredients. In a separate bowl, beat eggs and add yogurt, melted butter, and lemon juice. Stir into dry ingredients only until combined. Batter will be lumpy. Fold in blueberries. Do not overmix.

Bake 20-25 minutes or until tops are rounded and browned.

Can freeze after cooled.
