-Sliced yellow squash
-Sliced zucchini
-Mushrooms
-Roasted Red Peppers
-Minced garlic
-1-2 tablespoon Olive oil
-salt and pepper

-Large tortilla
-A spread - ranch, we use - aioli sauce
-Fresh spinach leaves
avocado

Directions:
Directions:
-Set oven to 425º
-Spread veggies on baking sheet, mix with olive oil. Add salt and pepper. Bake for 10-15 minutes - until just tender, not too soft.

-Create panini:
-Spread sauce on large tortilla
-Add veggies - less is best!
-Add fresh spinach and sliced avocado
-Roll up tightly
-Grill on a panini press. If you don't have one, I suspect you could brown and seal the tortilla in a pan on the stove, sprayed with Pam or a little olive oil.
