6 boneless, skinless chicken breasts
1 (12 ounce) can frozen orange juice concentrate
2 Tablespoons lemon juice
1 teaspoon soy sauce
1 (15.25 ounce) can peaches, with juice
1 (20 ounce) can pineapple chunks, with juice
1/4 cup light brown sugar
1 Tablespoon cornstarch
Hamburger Buns
Fresh sliced pineapple, grilled

Note: I recommend topping your sandwich with a thick slice of grilled pineapple. You can do this with a stove top grill pan or on the grill. I like to cook mine while my food is cooking in the pressure cooker.
In a bowl mix orange juice concentrate, lemon juice, soy sauce, peaches, pineapple chunks & brown sugar.
Pour 1/2 mixture into pressure cooker.
Place chicken breasts on top of sauce.
Pour remaining sauce over chicken.
Lock lid into place.
Press Pressure Cooker Feature (if using Instant Pot)
Cook for 12 minutes with pressure valve closed.
When pot is finished, carefully open pressure valve and allow pressure to release.
Once pressure has been released, open pot, remove chicken and shred.
Strain juice from pressure cooker into a pot.
Remove one Tablespoon of juice and put into a small bowl.
Add 1 Tablespoon of cornstarch and mix well.
Add cornstarch mixture to juice.
Cook over medium heat until juice mixture thickens.
Pour over shredded chicken, toss to coat.
Place 1/4 cup of shredded chicken mixture onto a hamburger bun.
Top with grilled pineapple slice and devour.
