4 - 5 Chicken breast cooked well and cooled or I whole rotisserie chicken chopped
Meat can be chopped in large - to medium chunks
2 boiled eggs - chopped
1/3 c of celery chopped
I/3 c of red bell peppers chopped
1/3 c of green bell peppers chopped
1/2 c of mayonnaise
splash of Texas Pete hot sauce
1/3 c of salad cubes or relish

Mix all well in a large bowl - can be served warm or cold

This chicken salad recipe differs from my Mothers because it does not contain onion. It tastes differently and is used when serving guest who have sensitivity to onions. It is just as good and no one can tell the difference. I love to serve it as grilled sandwiches, or simply on a bed of lettuce and fresh tomatoes with crackers for a light lunch or dinner.
