Dry rub the chuck eye steak with “Wee Willy’s - Steak Formula”. Pour a little extra virgin olive oil on each side, and rub some more of the steak formula covering the steak thoroughly. Wrap tightly in plastic wrap, and refrigerate from 2 to 6 hours. The longer the better.
- Soak 2 cups of hickory chips for 2 hours.
- Use a Webber Grill! Get the charcoal going until it’s white-ish.
- Add a cup of the soaked hickory chips to the charcoal around the edges right before putting the steaks on the grill.
- Grill the steaks over the coals for 7 minutes per side. Add the 2nd cup of hickory chips when flipping to the other side. 7 minutes per side works for just about any type of steak you cook on a Webber, as long as you use the right amount of coals; and, the coals are at the right temperature - that’s the tricky part. It’s important to make sure the charcoal isn’t flaming while grilling the steaks.

Chuck Eye steaks are fantastic, if you can get them. A butcher’s secret cut, that I think has a flavor better than rib eye, and half the cost, or even less. There’s only 2 of these on each cow, so not always available. Keep it a secret!
