I small yellow onion, chopped
2-3 cloves garlic, crushed and minced
1 tablespoon olive oil
1 12-ounce can tomato paste
1 14.5-ounce can petite diced tomatoes or flavored canned tomatoes (Italian style)
1 tablespoon dried oregano
1 tablespoon dried dried basil
1 tablespoon parsley
1 teaspoon salt, or to taste
1/4 cup sugar, or to taste

Any of the following can be added:
1 pound cooked ground beef
1 pound cooked Italian sausage
1 large can mushrooms, drained

Directions:

Saute onion and garlic in olive oil until tender. Add other ingredients (mushrooms can be added here) and about 3 tomato paste cans water. Cook on medium heat until boiling. Reduce to simmer. Cook 1 hour until thickened and flavors have combined; stirring occasionally. Serve over hot noodles with plenty of Parmesan cheese!

For meat sauce: cook ground beef and drain then add onion and garlic. Saute until onion is tender and add remaining ingredients as stated above.

For pizza sauce: use 1 can less water.
