Basic Recipe
3 eggs
1/2 teaspoon anise seed or extract (I use 1/2 a bottle of the anise oil)
2 teaspoons baking powder
1 teaspoon vanilla (omit the vanilla if making anise Pizzelles)
1 3/4 cups flour
1/2 cup butter (melted)
3/4 cup sugar

To make chocolate Pizzelles~
Add 3 tablespoons cocoa and 3 tablespoons sugar to the basic recipe. Omit the anise flavoring and use vanilla.

To make Almond Pizzelles~
Omit vanilla and anise flavorings from the basic recipe. Add 1 tablespoon almond extract or 2 tablespoons Amaretto. Add one cup of finely chopped or ground almonds to the batter

Beat eggs and sugar together. Add cooled melted butter or margarine, and vanilla or anise. Sift flour and baking powder and add to egg mixture. Batter will be stiff enough to be dropped by spoon. Batter can be refrigerated to be used at a later time.

Once Pizzelles are made, I stack them about 6 high on a cooling rack and place in a 170 degree oven for 1 hour. Then turn off the oven and leave in overnight to crisp up.

Makes about 30 Pizzelles
