Peasant Bread Recipe

4 cups flour
2 tsp kosher salt
2 cups lukewarm water (1½ cups cold water mixed with ½ boiling water)
2 tsp sugar
2 tsp dry yeast
2 Tbls. soft butter

Directions:
Directions:
In a small bowl dissolve sugar into water. Sprinkle yeast over top. No need to stir, just let it stand 10-15 minues or until mixture is foamy and bubbly just a bit. In a large bowl, whisk together the flour and salt. Stir yeast mixture and add it to flour mixture. Mix until the flour is absorbed. Cover bowl with plastic and set in warm place to rise (about 1 hour). Preheat oven to 425º . Grease 2 oven-safe 1 quart bowls. Grease with butter. Use forks to punch down dough and scrape from side of bowl. Divide dough into two portions. Dough is wet and will plop out of bowl. Let rise second time for 20-30 minutes (do not cover dough this time). Bake for 15 minutes, reduce heat to 375º for 15-17 minutes longer. Remove from bowls. If dough looks a little pale, return to oven (outside of bowl) and bake additional 5 minutes.

Faux Focaccia:
Instead of bowls, grease 9x13 baking dish. Plop all dough in dish, drizzle with 2 Tbls. olive oil. Using your fingers, gently spread dough out so that it fits in the pan. Create dimples in the dough. Sprinkle with chopped rosemary and sea salt (or other spices as desired). Let rise 20-30 minutes. Bake 15 minutes at 425º and 17 minutes at 375º. Remove from pan and cool
