3 lbs. ground beef, 80% lean (chili grind, preferred)
1 large yellow onion, chopped
4-5 cloves garlic, crushed
1½ teaspoons ground black pepper
7 tablespoons chili powder
1- 16 ounce can tomatoes, chopped, with juice
3 teaspoons ground cumin, divided
½ teaspoon ground cayenne

Directions:

In a 4-5 quart pot, brown meat, onion, garlic, black pepper, cayenne, and 1 teaspoon cumin.
Add tomatoes, chili powder, and 1 teaspoon cumin.
Cover and simmer, stirring occasionally. When meat is tender, add last teaspoon of cumin and simmer for 10 minutes.

Note: If you must use beans, always cook separately and add to bowl at table. Pinto beans work best. Yankees may use kidney beans. The west coast tribe is welcome to add 1/2 lb. fresh mushrooms.

Always use wooden utensils if you use cast iron.
