1 Cake Yeast
1½ c Scalded Milk (then Cooled)
1 tbsp. Sugar
4½ c Flour
½ c Sugar
3 tbsp. Butter (very soft)
½ tsp. Nutmeg (Mace?)
2 Eggs
¾ tsp. Salt

Directions:
Directions:
Dissolve yeast and 1 tbsp. sugar in the luke warm milk. Then add half of the flour and beat well. Cover and set aside to raise in a warm place, about 1 hour.

Then add the butter and sugar that is creamed. Beat eggs and add to this- then the nutmeg and remaining flour to make a soft dough. Last add the salt and knead lightly. Cover and let rise again about 1½ hours. When it is raised, lightly roll out to ¼" thick, cut out with doughnut cutter. Put these on wax paper and let rise about 45 minutes or until light. Drop in hot fat with side upper most that has been next to the paper.
