1 cup water
1/2 cup butter
1 cup flour
4 eggs (1-2 at a time)

In a saucepan, bring water and butter to a boil:

Remove pan from heat and add flour

Stir vigorously with wooden spoon until mixture leaves pan and forms a ball (1-2 minutes). Add eggs (1-2 at a time)

Beat between each egg until mixture is smooth again.

Drop spoonfuls onto a greased cookie sheet, with room for expansion.

(Tip: spray the front and back of a spoon with cooking spray and use that to shape the dough on the pan. They come out pretty much the same shape as when they go in, except bigger.)

Bake at 400 degrees for about 20 minutes (or until puffed and golden). Remove and cool on a wire rack while preparing filling.

Cut off tops of cream puffs and fill with desired filling. Feel free to drizzle chocolate (or Nutella) over the top to make them into eclairs. Fresh fruit (berries, especially) are very good with these as well.

or a mixture of any of these.
