1 c shorting
2 cups sugar
3 cups water
1 lb. raisins
Boil these four ingredients for 10 minuets with lid on, cool to room temperature

2 tsp baking soda
1 tsp salt
2 tsp cinnamon
2 tsp nutmeg
1 tsp cloves
1 tsp allspice
5 cups of flour (approx.)
Add all else of the above ingredients, but add the baking soda last

Bake 45 minuets at 325º in a greased un-floured dish

Lemon Sause

1 lemon
¾ c butter (1½ sticks)
1 c sugar
3 eggs

1st step
grate off all of the lemon zest, then 3 tbsp of the lemon juice
2nd step
in a double boiler over hot not boiling water, or in a heavy 2 qrt sauce pan stir lemon juice, lemon zest, butter and sugar until butter melts.
3rd step
in a small bowl, beat the eggs slightly then add the eggs to the butter mixture and cook, stirring constantly until mixture is very thick and coats the back of a spoon well. About 15 minuets. (DO NOT BOIL) or it will curdle. pour filling into a bowl cover serface with plastic wrap and refriderate for 3 hours or intill filling is well chilled.

Serve the Lemon Sause over the HOT Rasin Cake
