1 cup cauliflower stems, frozen.
•1/2 zucchini, frozen.
•1/3 cup raw cashews, soaked in water for at least 30 minutes.
•1/4 cup mint, fresh, leaves picked.
•1 1/4 cup almond milk.
•2 tablespoons raw cacao powder.
•2 tablespoons protein powder, chocolate or vanilla.
•1 tablespoon raw cacao nibs.
•1 tablespoon coconut flakes, to serve.

1. Place all ingredients (except for the raw cacao nibs and coconut flakes) in a high-speed blender and blitz on high until smooth. Pour into a jar or glass to serve and top with cacao nibs and coconut flakes.

Leftover cauli stems? Freeze and add them to your smoothie for an extra creamy blend! We’ve also chucked in a zucchini that was on its last legs – trust us, it totally works and makes this blitz delicious, veggie-packed and best of all... waste-friendly!

I could not have been more skeptical about this recipe but am such an IQS fan girl that I braved it this weekend and OMG. DELICIOUS. Just like choc mint icecream but even BETTER. Did not add the protein powder and used peanut butter place of the cashews and added 1/4 frozen banana. I AM SO HAPPY. Pretty sure this is healthy enough for an every day breakfast (somone pls let me know if not). Very excited to be having icecream for breakfast every morning.
