3 eggs
1 cup vegetable oil
1 1/2 cups sugar
2 cups of raw zucchini (peeled and grated)
1 tsp vanilla
3 cups flour
1 tsp baking soda
1 tsp salt
3 tsp cinnamon
1/2 tsp baking powder

Directions:
Directions:
Beat eggs until light; add oil, sugar, zucchini and vanilla. Mix lightly but well. Add remaining ingredients and mix well.
Pour into 2 greased loaf pans. Bake at 350º for 1 hour. Cool on rack.

I grate zucchini from the garden and freeze in a ziplock in 2 cup measures. Just thaw and use this recipe. It will be watery but that’s fine, the moisture is needed for the recipe.
