4 halibut fillets
4 slices glutin free bread toasted or two slices ampnd about 1/2 cup pestatios or othwr nuts
2 clives garlic peeled and crushed
Juice and grated zest of one lemon
Small bunch fresh tarragon chives and dill roughly chopped
4 tbsp olive oil

8 tbsp mayo
6 tbsp yoghurtl8 gerkins roughly chopped or pickled asoaragus
1 tbsp chopped capers

Directions:

Preheat oven to 425C
Place halibut skinned side doen in glass dish

In food processor,blitz into fine crumbs,all but the herbs.
Add herbs and pulse until everyrhing us chopped.
Add 2tbsp lemin juice and 2 tbsp oil to mix.
Gently press the mixture on top of each fillet.
Brush with remaining oil.
Can refrigerate fish till cooking time.

Place in hot oven for about 15 minutes. (USE GUIDE 10 MIN PER INCH) Halibut will continue cookjng one remived. The fillets shoyld be white as compared to opague when raw.
Sauce
Combine all ingredients .adhpjust flavoutprs to suite. Serve with fiSh.
