For the manicotti crepes:

1 1/2 c. flour
2 1/2 c. water
6 eggs
1/2 tsp. salt or to your taste


For the manicotti filling:

3 lbs. ricotta cheese
3 eggs
Fresh parsley
Romano cheese
Salt & Pepper to taste

Beat eggs slightly with salt and water. Add flour and mix til smooth. Batter will be thin. Oil a pancake griddle or 8 in. pan with a thin coat of oil. Do not keep adding oil unless batter starts sticking to griddle.
Cook as you would pancakes using a tablespoon of batter for each, spread quickly to form a thin circle.
The will cook very fast. Turn over once and remove immediately. Place on wax paper lined cookie sheet
or table. Let cool. Fill with ricotta filling.

Filling:

Combine all ingredients. Fill crepes with about a Tablespoon of filling and roll up. Place seem side down in shallow glass dish with sauce spread on bottom, making one layer. Spread sauce on top and sprinkle with grated cheese and mozzarella (opt.). Cover and bake about 20 min. @ 375 or til filling is warm.
