⅔ cup Semolina Flour (~125g)
4 cups of Milk
1 dash of Salt
4 tbsp Sugar
½ sachet of Vanilla Sugar (e.g. Dr. Oetker at World Market)
Peel of Half a Lemon
4 tbsp Raisins
2 tbsp Ground Hazelnuts or Dried Fruit

Directions:
Add salt, sugar, vanilla sugar, grated lemon peel, and semolina to the milk. Bring the mixture to a boil and keep stirring until a mash is formed. Add the raisins and the ground hazelnuts or dried fruit. Rinse small dishes (e.g. Ramekins) with cold water before pouring the mash into the dishes. Let cool and then turn over to place onto plates. Serve with your favorite fruit syrup or jam.

This is a typical Swiss recipe. Bettina's grandmother always made the best "Griesskoepfli" (literal translation: semolina heads) with home made plum compote.
