1 Rotisserie Chicken from Sam's or Costco
12 10" Flour Tortillas
3 ribs Celery Chopped finely
1 Medium Bell Pepper choped finely
1 large onion chopped finely
1 lb Andouille sausage diced to 1/4 inch
! Tablespoon Ground File'
Salt
Cayenne
Hot Sauce
Parsley

Potato Salad

Directions:
Directions:
Remove ll bones and skin from the rotisserie chicken and chop or shred the meat to bite size pieces

Saute the Vegetables in olive oil till tender and then sprinkle with the File', salt and pepper
Brown the Andouille sausage pieces

Assemble the burritos by layering the chicken, sausage and sauteed vegetables then add a layer of potato salad and roll up burrito style.

Wrap each burrito in foil and refrigerate.

These make excellent hand held food to carry to your parade picnic.
