6 Pounds Beef Brisket
8 Cup Water
1 Cup Salt
3 Tablespoons Sugar
1 Teaspoon Pepper
2 Teaspoons Mixed Whole pickling Spices
2 Bay Leaves
2 Cloves Garlic Minced
1/4 Teaspoon Saltpeter
2 Tablespoons Boiling Water

Directions:
Directions:
Cover met with water and bring to boil i large container. Let cool slightly; add salt, sugar, pepper spices, bay leaves and saltpeter that has been dissolved in the 2 Tablespoons of boiling water. When liquid is luke warm cover with 3 thickness of cheesecloth and weigh it down so the meat stays covered with brine. Let stand in cool place for 36 hours.
