1 pound of pasta (penne, ziti, rigatoni are good options)
3 Tablespoons of olive oil
1 onion finely chopped
1 bell pepper finely chopped
3 cloves of garlic chopped
2 teaspoons of tomato paste
3 teaspoons salt
2 teaspoons black pepper
2 teaspoons 21 seasoning salute(from Trader Joe's) or Mrs. Dash
2 teaspoons of Italian seasoning
1 ½ jars of your favorite pasta sauce.*
½ cup grated parmesan cheese
2 cups shredded mozzarella cheese

*My favorite is the can of Tuscano Marinara from Trader Joe's.

Optional: Add any vegetables you like some good choices: broccoli, grilled eggplant or zucchini, mushrooms, olives

Directions:
Directions:
Cook the pasta in salted water according to the pasta directions. Make sure it is al dente since you will finish cooking in the oven.

Saute the onion and pepper in the olive oil for 3-5 minutes over medium high heat.
Add the tomato paste garlic and continue cooking for 1- 2 minutes.
Add your chosen vegetables and stir together.
Add the seasonings and stir everything together and cook for 3 minutes.
Reduce the heat to medium and add the pasta sauce and parmesan cheese.
Cook for about 3-5 minutes.

Add the sauce to the cooked pasta along with 1 cup of the mozzarella cheese and stir everything together.
Put the pasta in a casserole dish and top with the remaining mozzarella cheese.
You can sprinkle a little parmesan and Italian seasoning on top of the mozzarella.
Bake in a 375º oven for 20 minutes or until the cheese begins to brown a little.
