2 boneless, skinless chicken breasts, butterflied and sliced in half
½ to 1 shallot sliced thinly
2 garlic cloves
flour for dredging
6 Tbsp. butter
5 Tbsp. olive oil
⅓ C. lemon juice
½ C. chicken stock
¼ C. capers
⅓ C. fresh parsley
salt and pepper

Season the chicken with salt and pepper and dredge in flour - shake off excess.

In a large skillet over medium heat, melt 2 Tbsp. butter with 3 Tbsp olive oil. When sizzling, add 2 pieces of chicken and cook about 3 minutes until browned and then flip and cook another 3 minutes. Remove and transfer to a plate

Melt 2 more Tbsp. butter and 2 Tbsp. olive oil and repeat with 2 remaining chicken pieces. Remove from the pan and add shallots, garlic, lemon juice, chicken stock and capers. Bring to a boil and scrape the bottom of the pan. Return chicken to the pan and simmer for 5 minutes. Remove the chicken to a plate and add the remaining butter to the sauce and whisk. Pour sauce over the chicken and top with parsley.
