(4) 6 - 8 oz pieces of fresh swordfish, about 1” thick
1/2 cup vegetable oil
1/4 cup olive oil
½ cup fresh basil, cut or torn into strips
3 T Dijon
¼ cup lemon juice (= 1 large lemon)
Fresh garlic

Directions:
Directions:
Whisk all ingredients together and put with swordfish in zip-lock baggie for 1 – 2 hours or overnight. Grill 5 – 10 minutes on each side, depending on thickness of steak)
Remove from grill and seal in foil to let juices sink in.

Serve with Parchment Paper Pocket Potatoes, Asparagus & Asparagus Vinaigrette (“Asparagus Sauce”)

Asparagus Vinaigrette:
1 tsp salt
½ tsp pepper
½ tsp garlic, finely minced
¼ tsp sugar
½ tsp dry mustard
1 tsp Dijon mustard
1/8 tsp cayenne pepper
Dash Worcestershire sauce
Dash Tabasco
3 T tarragon vinegar
10 T canola oil
2 T whipping cream
2 tsp parsley, chopped

Combine all ingredients in a jar. Shake well and chill. Drizzle over asparagus.
